How to Prepare
Sift about 2g (1 tsp) of matcha into a bowl, add 70ml (about 2.5 oz) of water around 80°C / 175°F, and whisk briskly in a zigzag motion until a fine foam forms. For koicha, use about 4g of matcha with 30–40ml of water and knead slowly into a thick, glossy tea.
