According to the Dried Noodles Quality Labeling Standards, the width must be 4.5mm or more and the thickness must be less than 2.0mm, and must be made from wheat flour. Kamaboko, spinach, and bonito flakes are usually added to a bonito and kombu dashi soy sauce. Flat noodles make it easy for the soup to cling to the noodles, making it ideal for enjoying together with the soup. ●Origin of "Kishimen" The Owari Plain has long been known as a noodle place, blessed with the best water from the Kiso River and a natural climate.・As a pronoun, it is widely popular among gourmets all over the country. There are various theories about its origin, but one theory is that it came from kijimen, flat noodles made with pheasant meat for the feudal lord of Nagoya during the Edo period, and the other from kishumen, which came from Kishu. There is a theory that during the Sengoku period, retainers of Takeda Shingen brought flat noodles 'himokawa' and 'hoto' from the Kanto region to the Owari region. In fact, there are various theories, and there is no clear established theory.
