Matcha has different "color, taste and aroma" depending on the grade of tea leaves. When using it for making sweets, matcha with a high grade is not necessarily the best, depending on what you are making. High-grade matcha has a nice color, but it does not have the unique bitterness of matcha, so when used in sweets, the taste may be lacking.
