Miso from Tsuru Miso Brewery

Miso is an indispensable part of the Japanese diet.

The history of miso, which we Japanese eat every day, goes back as far as the Asuka period, and its origin is said to be in mainland China. Since then, it has been deeply involved in the Japanese diet for about 1,200 years. Founded in the 3rd year of Meiji, Tsuru Miso Jozo is a long-established miso specialty store that continues to make miso with great care, carefully selecting ingredients grown in the bounty of the earth and the rich nature. We will bring to your dining table the deep and traditional flavors born in the red brick storehouses that stand out against the moat of Yanagawa.

Tsuru Miso Jozo's original classic was a sweet white rice miso made with plenty of rice malt. It's a nostalgic taste of Yanagawa.

Recently, “Hakushu Awase Miso”, which is a combination of rice malt and barley malt, has become a staple.

Yanagawa, a water town loved by the poet Hakushu Kitahara. "Kawakudari" is a place where time drifts quietly.

As you go down the river while enjoying the seasonal flowers and swaying willows, you will see a red brick warehouse built in the Meiji period at the junction of the inner moat course and the outer moat course. Even today, miso continues to mature in the traditional row of storehouses mentioned in Hakushu's poem.

The back of the factory faces a moat, and sometimes a slow "Kawakudari" boat approaches. We have endeavored to make miso to this day, receiving the rich blessings of the quietly flowing river.
