It can be put away, but there is no way to hide its wonderful aroma.) Yoru no Ume was named after the cut azuki beans, which resembled plum blossoms blooming in the darkness of the night. This is Ogura Yokan, which is representative of Toraya.
[Omokage] Yokan with brown sugar "Omokage" is a modest word that reminds us of memorable people and things. The unique flavor of brown sugar is sure to remind many of you of the good old days when you ate it. At Toraya, we use brown sugar from Iriomote Island, Okinawa.

[Fresh green] Yokan with matcha green tea

When it went on sale in 1957, it was a green yokan that contained chlorophyll and B vitamins, and was approved as a special nutritional food by the Ministry of Health and Welfare. Since 1965, it has been known as matcha yokan, and it is popular as a classic yokan. Enjoy the natural color and pleasant bitterness.

We use Canadian clover honey. Enjoy the rich flavor of honey and the elegant sweetness of white bean paste.

We use black tea produced in Ishitobi, a mountainous area in Minamata City, Kumamoto Prefecture. Ground tea leaves are mixed with white bean paste and kneaded. You can enjoy the original sweet and fragrant aroma and rich flavor of black tea.

[Azuki]

Adzuki beans are an important raw material that influences the quality of the bean paste, which is the life of Japanese sweets. At Toraya, we use a variety called “Erimoshouzu” from Tokachi, Hokkaido. Especially in Tokachi, where there is a large temperature difference between day and night, high-quality azuki beans with a rich flavor, color and texture are grown.

[White adzuki beans]

White adzuki beans are a rare raw material that is easily influenced by the climate and the production volume is limited. The white adzuki beans that Toraya mainly uses are a unique variety called “Fukutora Shiro”*. It is cultivated by hand from seeding to harvesting, and the main production areas are Gunma and Ibaraki prefectures. Toraya has a long history of cultivating white azuki beans, and it began in 1927 when the 15th owner, Takeo Kurokawa, commissioned the cultivation of white azuki beans to the Tone County Agricultural Association (the predecessor of the Agricultural Cooperative) in Gunma Prefecture. *In February 2018, this white adzuki bean was registered as “Fukutora Shiro” by the Ministry of Agriculture, Forestry and Fisheries. This is the first time for a private sector to register an adzuki bean variety.

【brown sugar】

Brown sugar, which has a unique flavor, is made by boiling down the squeezed juice of sugarcane and contains a lot of minerals. At Toraya, we use brown sugar from Iriomote Island, which is one of the types of “Okinawa brown sugar” (Note) and is characterized by its round and gentle taste. It is used in various sweets, including the standard yokan "Omokage".

[Agar]

Agar, which is indispensable for yokan, is a traditional Japanese food made from seaweed such as Tengusa. The natural thread agar used in Toraya is made using traditional methods at designated factories in the cold mountainous areas of Ina, Nagano Prefecture and Ena, Gifu Prefecture, where there is little rain or snow. Several types of seaweed with different characteristics are blended and finished to the quality (viscosity, etc.) specified by Toraya.
