Tencha
Tencha in Kyoto Prefecture is produced in the production areas (raw materials for matcha) of Uji City, Joyo City, Kyotanabe City, Kizugawa City, Wazuka Town, Ujitawara Town, and Minamiyamashiro Village.
Cultivation under cover blocks sunlight with a shading rate of 95% to 98%, which suppresses the conversion of amino acids into catechins, resulting in a very delicious tencha.
And the shoots that are blocked from the sunlight expand the surface area of the leaves and increase the chlorophyll in order to photosynthesise even a little. The result is bright green tencha with thin leaves that are easy to grind with a mortar.
Tencha is ``a tea made by drying fresh leaves grown under a cover without rubbing.
