"Fuji no Kombu" is cooked using a special casting kettle and a thick cypress lid, and is cooked over an open fire method that traps the flavor slowly over a hearth built with refractory bricks.

The kombu tsukudani is made from carefully selected natural kombu seaweed from Hokkaido, and has a springy texture and the umami of kombu spreads in your mouth.
Separately cooked salted kelp and bonito denbu are carefully mixed one by one by hand. The sweetness of the bonito from Kagoshima prefecture goes well with rice.
It is also recommended as an accompaniment to rice or as a snack with alcohol.
