JOKK MOKK is the name of a small town surrounded by forests and lakes, located on the Arctic Circle, about 800 km north of Stockholm, the capital of Sweden. There is a warmth of home in contrast to the harshness of nature. The homemade sweets that always decorate the dinner table are what liven up their conversations. We feel that the essence of Western confectionery lies in the deliciousness of handmade sweets made with sincerity, and so we changed the spelling of our company name to "YOKU MOKU" to make it more familiar to Japanese people.

The Birth of Cigare

Cigare was born in 1969. It takes advantage of the richness and flavor of butter, has a light and crispy texture, and melts gently in your mouth. Once you try it, you'll want to eat it again. That was the revolutionary sweet we aimed to create. Cigare has a cute, rolled up shape. It is baked using an abundance of butter. You can enjoy the rich flavor, the crispy texture, and the delicate melt-in-your-mouth texture.

This was a huge challenge that overturned conventional wisdom in the confectionery industry. The founder of Yoku Moku, Aoyama, was full of passion and a true artisan, so he decided to take on the challenge of creating sweets like no other.

Our selection criteria are based on high quality. Rather than ingredients that stand out, we choose ingredients that come together to create a delicious dish.

■ Butter made in Hokkaido

The butter that Aoyama Yoku Moku chose as a standard product is made from raw milk grown in the vast natural environment of Hokkaido, and boasts consistent quality, high flavor, and freshness. The moist texture is also created by the generous amount of butter contained in the product.

■ Flour with specified milling

In order to avoid making the dough heavy and hard, we chose weak flour that is difficult for gluten to form, especially high-purity flour. Wheat flour is very delicate. The ingredients change slightly depending on the environment and conditions in which it is milled, which can lead to differences in the baked product. Therefore, we choose a manufacturer that mills flour to the most suitable conditions and mill it there.

■ Aoyama Yokumoku style vanilla essence

What kind of vanilla scent would be suitable for a firm dough that uses a lot of butter? After pondering this question, a special vanilla flavoring was born. It is a high-quality product that uses a generous amount of natural ingredients from Bourbon vanilla sticks from Madagascar, and has a sweet yet spicy scent. This vanilla essence matches the butter without being drowned out by it, adding an accent.
