Barley miso with a faint sweetness and refreshing aroma. Made with domestic barley. Made with barley koji, twice the amount of soybeans (20%, 200%). It is a quality that makes use of the sweetness and umami of koji. We do not use genetically modified soybeans.
Barley, a raw material, is handled on the same equipment as wheat. Refrigeration can help reduce color change to some extent. The black streaks in miso are part of the barley called black striated lines. You can enjoy it as is.
The white substance rarely seen on the surface of miso is a type of amino acid (tyrosine) that indicates ripening. It does not impair the taste and flavor. Do not pour hot water into the container.
