A new genre of miso that colors food with a gentle taste. The new manufacturing method "Cozy koji blend manufacturing method", which requires more than twice the process of making general miso, brings out the sweetness of the koji to the limit, realizing a different taste and texture than ever before. .
Aiming for the best fermentation and maturation, after testing all conceivable conditions of temperature, time, and yeast, the rice koji created by the brewers is much softer than usual, as if it "melts comfortably." Therefore, we named this rice koji "Cozy Koji" by combining "Cozy" and "Koji".
A fresh, fruity taste and a juicy texture are achieved by using plenty of koji to bring out the sweetness to the maximum. It has a low salt content and can be eaten as is.
CRAFT MISO There is no fixed way to eat raw koji. You can enjoy it as it is by dipping it in your favorite ingredients, or even in miso soup. Feel free to experiment.
