Aso Takana begins by sowing seeds in October just before frost, and then sprouts and grows slowly and slowly during the cold winter, patiently enduring frost and snow.

Takana in Aso grows rapidly in spring.

At the foot of Mt. Aso in the northern part of Kumamoto Prefecture, the altitude is about 500m, and the temperature is lower than that of the plains. It contains plenty of nutrients and grows well.

In the Aso region, in early spring, Aso takana, which has thin, soft stems, is folded by hand and pickled at home. The pickles that have been pickled for about a week are called shinzuke (green pickles), and the pickles that are carefully temperature-controlled and aged until the beginning of autumn are called honzuke (furuzuke). It is called and tasted differently depending on the season.
