Menbei birth history

Around the time that karashi mentaiko became popular nationwide as a souvenir from Hakata, we started developing a new specialty of Hakata that has a long shelf life and can be carried at room temperature so that more people can enjoy it. I was. In developing new products using mentaiko, we focused on senbei, which are said to be the three most popular souvenirs: cheap, light, and delicious. In order to pursue both taste and appearance, menbei does not use extracts or powders to bring out the umami of seafood, and uses mentaiko, squid, and octopus as ingredients as they are kneaded into the dough. However, there was the problem that the crackers with the ingredients kneaded into them were prone to cracking during the manufacturing process. If you change the formula so that it doesn't crack, the taste will drop. In that case, we decided to give top priority to the taste and sell it as a “breakable” cracker, and in 2001, “Menbei” was born.
