Sumio Shimizu, a tea master who won the gold medal at the finishing technology competition for the same unrefined tea (raw tea leaves) sponsored by the Shizuoka Prefecture Tea Commerce and Industry Cooperative Association, is a gem of an after-fire finish that brings out the richness and umami unique to ichibancha. We are finishing up with the most picking deep steamed tea.
In this competition, tea masters from Shizuoka Prefecture, Japan's number one tea-producing prefecture, process the same tea leaves in-house and judge the appearance, light blue color, taste and aroma.
Received the gold medal in 2019, we are making deep steamed tea that maximizes the goodness of tea leaves by finishing methods that match the characteristics of tea leaves every day.
