It has been over 40 years since I continued to make it slowly and carefully using the ancient Japanese method.

"Toyo no Kobai" carefully made one by one

Arazuke

Before pickling the harvested plums with shiso, they are roughly pickled with salt. The nutritious plum vinegar that comes out at this time is used for pickling.

16% salt

We pay close attention to the amount of salt we use to make the best use of the ingredients and create pure umeboshi. 16% salt is the conclusion we arrived at to maximize shelf life and nutritional value. We use natural sea salt.

Doyo dried

At the end of the rainy season, "Doyo no Ushi no Hi", the kimonos are dried in the sun for three days and three nights. The plums that have been exposed to the warmth of the sun are even more delicious.

Shiso

For the perilla that produces the natural bright red color, we also use the “fragrant red perilla” that we cultivated. Harvested in June and July, when the aroma and color are most pronounced.

Honzuke

After careful preparation, it's finally time to pickle. Dried plum, shiso, plum vinegar.

Yano Nouen's umeboshi are made one by one in Daisen-cho, Oita, by the whole family. In 1995, among 1,200 kinds of umeboshi nationwide, our umeboshi "Toyo no Kobai" from Yano Nouen won the highest award for being the best in Japan. "Toyo no Kaume" is made by carefully picking plums grown in our own garden, drying them in the garden, and pickling them in our own home-grown shiso. is.

Uses only fully ripe Nanko plums

Nanko Ume grown with low pesticides are carefully waited until they are fully ripe before being harvested. Plump and ripe plums are soft down to the skin. Umami and nutrition are condensed.

Daisen, the town of water

Hita City, Oita Prefecture, is known as the "Water Village". Daisen-cho, which is located in the mountains, has fresh spring water. “Toyo no Kobai” grows slowly here in Mt. Daisen, a place where water, mountains, and people are pure.

Making soil using sawdust

Rich land nurtured by "soil source"

In order to produce excellent agricultural products, it is necessary to create healthy and strong soil. A lot of used sawdust comes out of the mushroom cultivation factory that Oyama Town is working on.

In the 1970s, the idea of ​​composting this sawdust to create the soil of Oyama was born, and the organic fertilizer made by composting the sawdust was named “Soil source”. It has been about 40 years since this advanced initiative was continued. When the soil becomes healthy, it becomes almost unnecessary to use pesticides. Here in Daisen, even plums, which are said to require sterilization, are used in a surprisingly small amount that is not dangerous to people in other areas.
