It is a light-colored, medium-sweet Shinshu miso made with JAS-certified organic soybeans grown in natural soil, and domestically produced rice. Peeling off the soybean skin and polishing it gives it a light, elegant bright yellow color. Since it is a "raw miso" that has not been heat sterilized, yeast and enzymes are alive in addition to the original flavor of miso.
